To assist the chef and Sous Chef with daily preparation of the menus items. |
| SPECIFIC DUTIES: |
- To assist in steam table service three times a day.
- To prepare and cook barbecue items.
- To do vegetable preparation.
- Stock room - put away deliveries - and stocking of kitchen areas as required.
- To clean - up the kitchen after each meal as instructed by the chef.
- Responsible for cooking and set-up of breakfast items for service as required.
- To do all other pertinent jobs as instructed by chef or sous chef.

Dining Room Server |

| JOB OBJECTIVE: |
To serve the guests 3 meals daily in a professional and friendly mannr according to the standards of the establishement. |
| SPECIFIC DUTIES: |
- Be the first contact with the guest and ask about bar drinks, then let them know the Captain will be by as soon as possible.
- Complete knowledge of the menus and the daily specials.
- To aid other Servers and Captains when needed.
- Clearing and setting of tables to resort standards.
- Responsible for your tables’ centre pieces i.e. honey pot, sugars, S & P, jams, brown sugar, at breakfast and to see that they are filled/replaced after each meal.
- To maintain a clean and clear work area.
- Attend and complete your assigned “aftermeal”.
- To be checked out after each meal by your Captains.
- Serve meals with National Sanitation Standards of cleanliness.

Captain |
| REPORTS TO: |

| JOB OBJECTIVE: |
To be a close contact with guests by providing beverage service, entertainment information etc. during meal hours. To oversee the Servers, along with the maintenance and general cleanliness of the Dining Room on a daily basis. |
| SPECIFIC DUTIES: |
- To be in constant contact with guests. See each table at least 3 times during the meal hour, to ensure they have everything they need, discuss the nightly entertainment or just to say hello.
- Serve alcoholic beverages during meal hours. One must know the wines, house wines, beer brands, liquors, that we offer and to be able to suggest a wine that would compliment the same menu items.
- Oversee the Servers in the proper Dining Room service, cleanliness (ie. sidestand, uniform, hair etc.), training and evaluations.
- General Maintenance
- Coffee Machines in lobby and dining room should be filled, along with the coffee machines and pots wiped down after each meal and wipe down your station and collect coffee pots.
- Tea and milk set-up before each meal - liners stocked.
- Continental breakfast when ordered and to collect the trays when they are finished.
- Side stands: Linen, bar glasses, wine bottles etc. removed
- Linen: gathered after each meal, taken to laundry, and linen counter replenished/straightened up before each meal, along with the cleaning of the microwave.
- Oversee the general clean-up of kitchen by the servers. One headwaiter will be responsible for this each week.
- To fill the wine glass shelf before each meal.
- Check out the Servers i.e. tables set to standards, after meals completed, side stands cleared and cleaned, you are responsible for the staff in your assigned section. You are finished when everyone in your section has been checked out and you have been signed out by the Dining Room Manager.
- To see that receptacle for dirty linen is always in place in kitchen.
- To do the vacuuming in your section after each meal.
- To be in the dining room for the whole duration of the meal hour.
- To get at least 80% on the Captain beverage test to continue as a Captain

| JOB OBJECTIVE: |
To make sure the rooms are clean and up to the standards set by the resort. |
| SPECIFIC DUTIES: |
- To report to laundry for instruction each morning.
- To go to the pool deck each morning to clean chairs, tables, and ashtrays during the summer months.
- To clean each room assigned with the utmost of care and efficiency ( i.e. dusting, straightening furniture, pictures, making of the bed, cleaning the washrooms etc.) and to make sure the room is stocked with the necessary toiletries.
- To make sure the building closets are stocked if that is your assigned area.
- To make sure the pool area is clean and stocked with towels.
- To always be aware of items that are out of place around the property and or garbage that should be picked up.

| JOB OBJECTIVE: |
To ensure the safety of the guests while in and about the pool area, and to maintain the upkeep of the pools and their surroundings. |
| SPECIFIC DUTIES: |
- To ensure the safety of the guests in and about the pool area at all times by always being aware of what is going on in the pools and on the pool decks. Being Aware is accomplished by sitting on guard chairs provided, not talking to each other or guests and NEVER reading.
- To vacuum and clean the pools and empty filters daily.
- Clean pool deck and straighten chairs.
- To be available for swimming lessons when required by the guests.
- To conduct pool aerobics with the guests once per day.
- To ensure the first aid kit is stocked at all times.
- To make sure the pools are tested and the results are recorded as per Ministry of Health Specifications.

- To prepare the daily salad items along with cold sandwiches.
- Breakfast items such as fruit cocktail, grapefruit, prunes etc.
- To prepare the items for the barbecues.
- To help with the vegetable preparations for the day.
- To prepare all items required for buffets.
- To prepare all items required for working lunches and box lunches.
- Maintain the quality and sanitation levels in the department as instructed by the chef or sous chef.
- Assist other departments of the kitchen as required.
- To perform all other pertinent jobs as requested by chef or sous chef.
